Ramadan Recipe: Kazandibi

Kazandibi is a traditional Turkish dessert known for its unique caramelized, burnt-like crust and creamy texture. The name translates to "bottom of the pan," highlighting its distinct preparation. It is made with milk, sugar, and a thickening agent such as rice flour or cornstarch, cooked to a pudding-like consistency. The mixture is poured into a pan, where sugar is caramelized on the bottom, giving the dessert its signature browned surface. After setting, it is sliced and rolled or served as squares. Kazandibi is sweet, silky, and slightly smoky, offering a delightful contrast of flavors and textures.

Kazandibi

2 ½ cups full fat milk
2 ½ tbsp cornstarch
2 ½ tbsp flour
1 tbsp castor sugar
1 egg’s yolk
1 tsp vanilla extract
3 tbsp powdered sugar

  1. Make the Batter

    In a pot, combine the room-temperature milk with the cornstarch, flour, sugar, egg yolk, and vanilla extract. Place the pot on medium heat and stir constantly until the batter thickens. Let it bubble for a minute then turn it off, cover, and set aside.
  2. Caramelize the Sugar

    In a hot nonstick pan, melt the powdered sugar until it caramelizes. Stir occasionally and make sure it is spread evenly in the pan.
  3. Add in the Batter

    Start with one ladle of your batter and mix it with the caramelized sugar, this is your first layer. Spread it out evenly then pour in the rest of the batter – even it out but without mixing it with the first layer. Let it cook for 7 minutes then turn it off and set aside.
  4. Chill and Serve

    Once your pan is at room temperature, place it in the fridge for at least 3 hours. To serve, cut the molded batter into rectangular pieces and roll it. The caramelized layer should be on top, and the pieces would look like a Swiss roll.
  5. You can garnish your Kazandibi with dried roses or crushed pistachios.
