Ramadan Recipe: Turkish Kisir Salad

Kisir is a traditional Turkish salad originating from the southeastern region of Turkey. It's made with fine bulgur wheat, and flavored with tomato paste, pomegranate molasses, lemon juice, and olive oil. Thus, creating a tangy and savory profile. Also, fresh herbs like parsley and mint are the main ingredients to add brightness, while vegetables like tomatoes, cucumbers, and green onions enhance the salad's texture and flavor. This salad is packed with flavors, and it is super easy and quick to make for a Ramadan feast.

  • Ingredients of Turkish Kisir Salad

Kisir Salad

1 cup extra virgin olive oil
5 garlic cloves, crushed
1 tbsp of tomato paste
2 tbsp pepper paste, mild or sweet
2 tbsp pomegranate molasses
1 tbsp dried mint
1 tbsp cumin
1 tbsp salt, adjust to taste
2 cups boiling water
2 cups fine bulgur wheat
½ cup pomegranate molasses
½ cup fresh lemon juice
1 cup lettuce, finely chopped
1 cup chopped parsley
1 tomato, finely chopped
¼ cup chopped spring onions
¼ cup fresh mint leaves, finely chopped
¼ cup chopped cucumber pickles
  • Method & Directions of Turkish Kisir Salad

  1. Prepare the Sauce

    In a pan over medium heat, add in a 1/4 cup of olive oil along with the crushed garlic, tomato paste, pepper paste and mix it all together. Add in the pomegranate molasses, dried mint, cumin, and salt.
  2. Cook the Bulgur

    Stir in 2 cups of water and let it simmer for a minute, then turn off the heat, and add in your fine bulgur wheat. Now let it sit for at least 20 minutes.
  3. To get the best results, make sure to use the same measuring cup for both the water and bulgur.

  4. Chop the Vegetables

    While your bulgur soaks up the sauce, chop up your vegetables, including the lettuce, parsley, tomato, spring onions, fresh mint leaves, and pickles. Feel free to add or remove any vegetables you like.
  5. Mix it All Together

    Once your bulgur soaks up all the sauce and is fluffy and ready, add in the pomegranate molasses, lemon juice, and the rest of the olive oil. Mix it well together, then add in the chopped vegetables and mix well again.
  6. Taste the bulgur at this point and make sure it is fluffy and chewy. If it isn’t, add more hot water and leave it for a few minutes.

  7. Serve and Enjoy!

    Serve your Kisir in a nice salad bowl topped with chopped nuts or pomegranate seeds. You can also enjoy it with romaine lettuce for extra crunch.
